Poor Man’s Toffee

Warning:  Do not make this recipe unless you are prepared to exercise some self-control.  These are highly addictive.

Poor Man’s Toffee – what could be easier?  What could please teenage boys more?  This is a family favorite.

 

 

 

 

 

 

 

 

 

 

Poor Man’s Toffee

For jellyroll pan, I increase the ingredients by 1/2.

2 pkg saltines
2 sticks of butter
1 cup brown sugar
1 package chocolate chips
1 cup nuts ; (optional)

Spray a rimmed cookie sheet with Pam or, better yet, cover it in nonstick foil.  Line the cookie sheet with saltines – cover the whole surface breaking them to fit if necessary. You may not have to use all the crackers – just use enough to cover the pan.  Melt two sticks of butter with one cup of brown sugar.  Boil 3 minutes, not overcooking. Pour over the saltines. Spread around to cover all saltines. Bake at 400 degrees until bubbly, about 5 to 7 minutes.  Remove from oven and pour the bag of chocolate chips over that and let it sit for 5 minutes. Then use a rubber spatula to spread the softened/melted chips all over the saltines. Place in the freezer for at least an hour and a half.  Break it  into small pieces. Keep cold in either the fridge or the freezer.  Hide some for yourself.
