Cooking with Cooks Illustrated: A Tale of Two Hummus Recipes

Hurray!  I finally found the Tahini (sesame seed paste) at the grocery store!  I’ve wanted to try these hummus recipes from Cooks Illustrated for the longest time.  As usual with Cooks Illustrated, you have to join their website to get the recipes, but you can do a free 14 day trial.

The first hummus I tried was their Hummus with Smoked Paprika.  It’s very good with the paprika and cayenne giving it just the right amount of pizazz.

Then, I made Artichoke Lemon Hummus.  Like the one above, it’s as good as any hummus you’ll find in the stores.  Next time, I’ll add a bit more lemon zest to make the lemon flavor more pronounced.  All in all, these are good solid recipes from Cooks Illustrated.
